Fancy Beans on Toast

Ingredients
1 red bell pepper
4 spring onions
3 tbsp water
420 g reduced sugar baked beans
10 mushrooms
16 cherry tomatoes
4 slices wholemeal bread*
4 tsp butter*
pinch black pepper
Directions
1. Prepare the vegetables by chopping the peppers, onions, tomatoes and mushrooms.
2. Put the pepper and spring onions into a large saucepan with 3 tbsp. of water. Cook for 2-3 minutes over low heat, until the water has evaporated.
3. Add the beans. mushrooms & cherry tomatoes to the saucepan and continue heating for 5 – 6 mins, stirring often.
4. Meanwhile, toast the bread.
5. Spread each piece of bread with the spread. Pile the beans on to the toast and serve, sprinkled with black pepper.
