Ingredients

5 slices cucumber

1 grated carrot

1 tomatoes

4 cubes low fat feta

1 handful rocket leaves

6 olives pitted

1 mixed bell peppers

15 g walnuts

1 tbsp balsamic vinegar

2 slices wholegrain bread*

Directions

  1. Chop tomatoes, cucumber & peppers.
  2. Put rocket leaves, carrot grated, cucumber, tomatoes & peppers into a bowl.
  3. Mix in the balsamic vinegar.
  4. Add the feta cheese.
  5. Add olives & nuts.
  6. Serve with 2 slices of wholemeal bread.
