Ingredients

900 g lamb steaks

200 g baby carrots

2 onion

2 celery stalk

400 g can chopped tomatoes

2 courgette

2 garlic cloves

2 cinnamon sticks

2 bay leaves

200 ml vegetable stock cube*

2 tsp mixed herbs dried

pinch salt

pinch black pepper

pinch chopped parsley

Directions

1. Fry the lamb in batches for 4 – 5 mins on each side until browned. Set aside.
2. Dice onions, celery sticks, baby carrots. Add onion to pan and stir-fry for 10 mins. Add garlic, ginger and cinnamon sticks and stir-fry for 1 to 2 mins.
3. Return lamb to pan and stir-fry for 2 mins.
4. Add the tomatoes, 200 ml stock and peppers and season. Bring to the boil and reduce heat to low. Cover and simmer for 2 hours.
