Ingredients

200 g water

1 tsp olive oil

1 pinch salt

40 g penne pasta*

35 g chickpeas

5 cherry tomatoes

6 g mozzarella cheese grated

1 handful spinach

0.5 red chilli

1 tsp olive oil

1 tsp parsley

1 tbsp lemon juice

1 pinch salt

1 pinch black pepper

Directions

To Prepare Salad

  1. Cook pasta as per package instructions
  2. Cook chickpeas as per package instructions
  3. Stir in 1 tsp of  olive oil to cooked pasta
  4. Add the chickpeas, cherry tomatoes chopped, spinach and mozzarella to pasta and toss to combine.

To Prepare Dressing

  1. Finely dice chilli with or without seeds.
  2. Add 1 tsp oil, lemon juice, parsley, salt & pepper.
  3. Pour over the pasta mix
