Ingredients

2 tsp olive oil

8 turkey rashers

4 bacon rashers

4 potatoes

4 spring onions

4 tomatoes

4 whole egg

pinch black pepper

Directions

1. Precook the potatoes and cut into chunks.
2. Place the turkey sausages on the grill and turn every couple of mins until cooked.
3. In the meantime heat the olive oil in a large non-stick frying pan and add chopped bacon, cooking it for 1-2 minutes. Add in the potatoes and cook over a medium heat for 12-15 minutes, turning occasionally, until browned.
4. Add the chopped spring onions and tomatoes and cook over a low heat for another 4-5 minutes, while poaching the eggs.
5. Poach the eggs in simmering water for 3-4 minutes, until the whites are set and the yolks still runny (or longer if you prefer a firm set). Add a few drops of vinegar to the poaching water to help keep the eggs together.
6. Heat beans in microwave and heat for 2 mins.
7. Place a serving of the potato hash and turkey sausages and place a poached egg on top and serve with beans to the side. Season with black pepper.
