Ingredients

2 turkey breast

30 g mixed leaves

8 cherry tomatoes

5 slices cucumber

0.5 bell pepper

0.5 onion

Directions

1. Sprinkle spice of your choice (cajun, paprika, chilli etc.) over the raw turkey bake in the oven until cooked through.
2. In the meantime prepare the salad by finely chopping your onions, peppers, cucumber and tomatoes.
3. Mix all ingredients in a salad bowl with spices if required.
4. Once the turkey is cooked remove from oven – cut into cubes and add to the salad.

Note:
Pre-cook the turkey and add to salad in a lunch box for on the go lunch
