Vegetarian Spiced Wraps

Ingredients
1 tbsp olive oil
0.5 onion
1 garlic cloves
200 g chickpeas
1 tsp ground cumin
1 tsp ground coriander
1 tsp mixed herbs dried
1 whole egg
1 wholemeal wrap*
20 g lettuce
4 slices tomatoes
Directions
1. Heat half the oil in a large pan, then fry the onion and garlic over a low heat for 5 mins until softened.
2. Tip into a large mixing bowl with the chickpeas and spices, then mash together with a fork or potato masher until the chickpeas are totally broken down.
3. Stir in the dried herbs, with seasoning to taste.
4. Beat the egg and pour over mixture, then squash the full mixture together with your hands.
5. Mould the mix into 6 balls, then flatten into patties. Heat the remaining oil in the pan, then fry over a medium heat for 3 mins on each side, until golden brown and firm.
6. Serve 3 pieces in a warmed wrap folded with 2 leaves of lettuce and 2 sliced tomatoes.
