Simple Pumpkin Soup

2 x carrots diced
1 chicken stock cube made with 400ml water
500ml full-fat milk
1 onion, diced
- Skin, de-seed and chop the pumpkin.
- Place the onions and carrots in a large saucepan and add the stock bring to the boil then simmer for approx. 10 mins until the carrots have softened.
- Add the pumpkin and the milk and simmer for a further 10 mins.
- Remove from heat and cool.
- Blend to a smooth consistency.
- Add black pepper if desired.
