Simple Pumpkin Soup

Pumpkin Soup


2 x carrots diced
1 chicken stock cube made with 400ml water
500ml full-fat milk
1 onion, diced
500g pumpkin


  1. Skin, de-seed and chop the pumpkin.
  2. Place the onions and carrots in a large saucepan and add the stock bring to the boil then simmer for approx. 10 mins until the carrots have softened.
  3. Add the pumpkin and the milk and simmer for a further 10 mins.
  4. Remove from heat and cool.
  5. Blend to a smooth consistency.
  6. Add black pepper if desired.
