Beef Chilli with Rice

Instructions:
100g basmati rice, uncooked
1 tbsp. olive oil
1 red bell pepper, chopped
1 onion, sliced
1 cloves garlic, minced
½ tbsp. chili powder
½ tbsp. ground cumin
Pinch of salt
1 lb. lean minced beef
1 x 400g can diced tomatoes
2 tbsp. grated cheddar cheese
Directions:
- Cook rice as per package instruction.
- Heat the oil in a wok. Add red pepper and onions and cook until tender, approx 5 minutes.
- Add garlic and cook for a further minute. Add chili powder and cumin and stir until combined, then season with salt.
- Add beef and cook until cooked through.
- Add tin of tomatoes and stir until combined.
- Serve with rice and garnish with green onions and grated cheese.
