Satay Chicken Noodles
Serves 4 Prep Time: 5 mins Cook Time: 15- 20 mins
Ingredients:
4 x 130g chicken fillets, cut into strips
275g fine egg noodles
1 tbsp olive oil
1 red pepper, chopped
1 yellow pepper, chopped
340g broccoli
2 garlic cloves, crushed
1 x 400g tin of coconut milk
80g (4 tbsp) crunchy peanut butter
2 tbsp dark soy sauce
2 tbsp sweet chilli sauce
½ lime
Directions:
- Cook egg noodles as per package instructions.
- Heat the oil in a large pan/ wok.
- Cook chicken until cooked through. Remove and set aside.
- Add in the peppers, broccoli and garlic and stir fry until vegetables are tender – 3 to 4 mins. (sprinkle with water if the mixture is to dry).
- Return chicken to the pan.
- Drain the noodles and add to wok.
- Add coconut milk, peanut butter, soy sauce, sweet chilli sauce and juice from the lime. Mix all ingredients together.
- Stir fry for another few minutes and serve.
