Smoked Salmon & Avocado Salad with Brown Bread

Ingredients:
56g salmon smoked (cold-smoked)
1 egg
¼ cucumber
½ avocado
4 cherry tomatoes
mixed salad leaves
½ red onion
½ lime juice fresh
1 tsp olive oil
½ clove of garlic
1 medium soda bread*
1 tsp butter **
use gluten-free if required*
use lactose free if required **
Directions:
- Boil an egg in a saucepan for approx 6 – 7 mins.
- Put mixed leaves into the salad bowl.
- Prepare the salad by finely chopping your onions, pepper, cucumber, tomatoes, garlic and avocado. Mix together in a separate bowl.
- Add 1 tbsp. of olive oil and lime juice and mix together.
- Add the avocado salad to the mixed leaves.
- Slice the boiled egg.
- Cut smoked salmon into small pieces.
- Add egg and salmon to the salad and mix up all ingredients.
- Spread butter on bread and serve.
