Smoked Salmon & Avocado Salad with Brown Bread

Ingredients:

56g salmon smoked (cold-smoked)
1 egg
¼ cucumber
½ avocado
4 cherry tomatoes
mixed salad leaves
½ red onion
½ lime juice fresh
1 tsp olive oil
½ clove of garlic
1 medium soda bread*
1 tsp butter **

use gluten-free if required*
use lactose free if required **

Directions:

  1. Boil an egg in a saucepan for approx 6 – 7 mins.
  2. Put mixed leaves into the salad bowl.
  3. Prepare the salad by finely chopping your onions, pepper, cucumber, tomatoes, garlic and avocado. Mix together in a separate bowl.
  4. Add 1 tbsp. of olive oil and lime juice and mix together.
  5. Add the avocado salad to the mixed leaves.
  6. Slice the boiled egg.
  7. Cut smoked salmon into small pieces.
  8. Add egg and salmon to the salad and mix up all ingredients.
  9. Spread butter on bread and serve.
