Vegetarian Club Sandwich
If you want a no meat healthy lunch try these vegetarian club sandwich. Packed with hummus, avocado and fresh salad. Tasty and healthy.
Ingredients
3 slices whole grain bread
3 tbsp hummus ready-made
1 avocado
30 g mixed leaves
8 cherry tomatoes
Directions
1. Toast the bread and spread hummus evenly over one side of each slice. On one slice of bread, lay half the avocado, rocket and tomato. Season with pepper, then cover with another slice.
2. Put the rest of the avocado, rocket and tomato on and season again.
3. Top with the third slice and serve.
